Most kids are picky eaters, so finding the right recipes for your family can be a challenge. At Creative Kids Child Care, we provide healthy and balanced meals for morning tea, lunch and afternoon tea for our little guests. But to help you out at dinner time, here are some delicious, yet healthy recipes that will end up in their bellies instead of on the floor!
Pizza stuffed capsicums
Stuffed capsicums are a classic in most households, but the idea of a whole roasted capsicum doesn’t appeal to most kids. Luckily there is a simply way to make stuffed capsicums appeal to even the pickiest of eaters. Cook up some mince (preferably lean) with pizza sauce, onions, cheese, oregano and basil and sneak in some wilted spinach or kale into the mix. Stuff each pepper and top with a generous amount of mozzarella and slices of mini pepperoni before popping them in the oven!
Parmesan crumbed fish sticks
Fish and chips are often a kiddie favourite, but all the excess grease make for an unhealthy meal. Luckily you can get the same delicious taste without all the fat. Purchase good quality white fish fillets and cut them into 1-inch strips. Mix salt, pepper and flour in one bowl, 2 large eggs in a second bowl, and bread crumbs and grated parmesan in another. Dip each piece of fish into the flour mix then the egg mix and then the crumb mixture and place on a foil-lined baking sheet and bake in the oven for 10 or so minutes. Serve with a fresh salad or reduced fat coleslaw.
Hidden vege mac and cheese
Mac and cheese is a home baked classic, but all that cheese and cream isn’t healthy at all. Instead cook a cup of cauliflower florets, a cup of butternut and a cup of carrot in a pot over medium heat until tender and whizz it all up in a blender to create your sauce. Place it back on the heat and mix in 2 cups of cheddar cheese, a 100g of cream cheese and 2 cups of milk along and stir until smooth. Then add some al dente elbow or macaroni pasta and stir through before serving.
